我們飲食中所吃的絕大多 數油脂，不論是飽和或不飽和脂肪酸、不論是動物性或植物性油脂，都屬於長鏈脂肪酸，脂肪酸鏈的長短相當重要，因為人體在新陳代謝時，依其鏈長會有完全不同 的反應。椰子油是少數含有中鏈脂肪酸的油脂，中鏈脂肪酸，如月桂酸（lauric acid， C-12）、辛酸（caprylic acid， C-8）、癸酸（capric acid， C-10），其中月桂酸含量高達了50%，月桂酸為母乳最重要的飽和脂肪酸，有很好的抗微生物活性，並能促進新 陳代謝，調節生理機能；中鏈脂肪酸不易轉變為較大脂肪分子囤積成身體脂肪，不會增加身體代謝的負擔。
