牡蠣養殖業。
現在では広島県内、呉市安浦町にのみ。そのすがたを残している「杭打ち式 牡蠣」（杭打ち式のイカダでの養殖牡蠣）。天然に近く栄養価も非常に高いため、かつては広島県全域で行われていました。
しかし非常に手間がかかり生産性が悪いため、現在ではそのほとんどが垂下式養殖へと変わりました。
金田水産では「ほんとうのおいしさを感じてもらいたい」「自然のことわりに倣って行う広島牡蠣の真髄を表現したい」そんな思いで、現在でも杭打ち式養殖を行っています。
