General information

Inside Out Bakery’s food is safe and healthy for a large proportion of the population, regardless of dietary allergies, intolerances, or preferences. Our inclusive menu helps build a strong sense of community amongst our patrons and their friends, families, and coworkers. As opposed to most conventional gluten-free products that are packed with more sugar, fat, and carbs than their gluten-filled counterparts, our products are nutritionally rich, low in sugar, contain moderate amounts of healthy fats, and are enhanced with quality protein and nutrients.

At IOB we pride ourselves on a commitment to function over form, which means that we focus on nutrition, taste, and texture. As such, while our products may not mimic mainstream shape or appearance, we guarantee their flavours and textures will have you coming back for more. Our artisan breads and buns are a great example. They may not look like a typical loaf, but the bread-eating experience most gluten-free people crave will be there!

Now you can host with ease, knowing that you have accommodated the diverse needs of all your guests. Food should not be feared and here at Inside Out bakery we strive to ensure that it can be thoroughly enjoyed by all. There is no longer a need to purchase "special" products for each person with a certain food intolerance or lifestyle choice. One order from Inside Out Bakery fits the bill for the whole group! Every order from IOB comes with a written commitment and quick access to ingredient information (check out our ingredient lists at www.insideoutbakery.com), so that everyone can safely enjoy delicious and nutritious food, together!

Our facility is 100% Free of the Most Common Food Allergens
• Wheat
• Dairy
• Peanuts
• Sesame seeds
• Corn and its derivatives
• Mustard
• Commercial yeasts
• Pork

We also have strict protocols in place to prevent cross-contamination from major allergens such as tree nuts, fish, seafood, and crustaceans.

To maximize the nutritional and health benefits, we always give preference to organic ingredients when they can be reliably sourced.
We Use:

• Certified gluten-free flours with a focus on less starch
• Natural and organic sweeteners (and less overall!)
• Natural yeasts and leavening agents to replace commercial yeasts
• Natural binders such as guar gum, arrowroot starch, and kudzu. Preference is always given to naturally occurring proteins and fibre to provide products with structure.
• Only organic soy and its derivatives.
• Apple Cider, Balsamic, and Coconut Vinegars used as white vinegar alternatives.
• Prebiotic and probiotic foods to enrich our products in order to support a healthy and balanced microbiome.
• Organic, pastured eggs whenever possible. Note: In the winter it is difficult to source completely pastured eggs, so organic grains are used for feed.
• Grass-fed, pastured, and/or organic meats are sourced for all products.
• No added sulphites, although naturally occurring sulphites are present in some products.
• Natural, healthy, cold-pressed fats and oils used at the appropriate temperatures to prevent rancidity.

We Do:

• Process tree nuts in a dedicated workspace with dedicated equipment to prevent cross contamination.
• Wherever possible we include vegetables in our products for increased natural fibre that is gentle on the body.
• Buy local, wherever possible, supporting those around us who are focused on providing the highest quality, health-promoting products.
• Educate ourselves on diabetic friendly choices and fructose intolerance.

We Believe:

• Every product should provide quality protein, fibre, and essential fatty acids (flaxseed, hemp seed, chia seeds, pumpkin seeds, sunflower seeds, leafy vegetables, and walnuts) coconut oil, ghee
• All dietary and lifestyle choices are valid and so make every effort to support FODMAPs free, vegan, and Paleo requests. Other sensitivities, restrictions, or preferences are also easily accommodated upon request.
